It can be challenging to cater to everyone's dietary needs when planning Christmas party food. This gluten-free, vegan mushroom recipe is guaranteed to please vegans and meat-eaters alike! It’s the perfect healthy vegan snack or Christmas appetizer.

Caramelized Mushroom Toast Recipe

Ingredients

  • 2 Tbsps vegan butter, plus 1 Tbsp vegan melted butter for toasting bread

  • 2 8 oz cartons of button mushrooms, cleaned, stems removed and thinly sliced

  • 1 clove garlic 

  • 2 Tbsps balsamic vinegar

  • 1 tbsp Dijon mustard (optional)

  • 2 sprigs fresh thyme leaves

  • ¼ tsp salt 

  • Pinch of ground black pepper

  • 1 loaf gluten-free baguette or sandwich bread, sliced diagonally 

  • For garnish: fresh thyme leaves

Instructions

  1. Preheat the oven to 400 degrees. Heat the butter in a skillet over medium-low heat. Add the thinly sliced mushrooms and cook until browned and caramelized; about 10-15 minutes. Keep stirring so that they do not burn. 

  2. Add the balsamic vinegar, dijon mustard, garlic and fresh thyme and stir for 3 minutes. Season with salt and pepper then remove the pan from the heat.

  3. Lay the bread slices onto a baking tray lined with aluminum foil. Brush each slice with melted butter and toast in the oven for 5 minutes or until lightly browned.  

  4. To serve, spoon a heaping tablespoon of the mushroom mixture onto a slice of bread. Garnish with fresh thyme leaves and serve.

Step 3

  • Feel free to substitute vegan butter with coconut oil or olive oil.
