3/4 cup unsalted butter, room temperature
1/2 cup light brown sugar
1/4 cup granulated sugar
1/4 tsp salt
1 tsp vanilla extract
1.25 cups pulverized rolled oats or graham cracker crumbs
1/2 cup mini chocolate chips
Reindeer Pretzel Candy Assembly
10 oz. melting milk chocolate (or milk chocolate chips)
1 cup pretzels, broken in half
Candy eyes (for garnish)
Red M&Ms or other red candy (for garnish)
Instructions
Mix butter, brown sugar, sugar, salt, and vanilla, and beat until light and fluffy.
Add the oat flour or graham cracker crumbs and fold to combine.
Stir in the mini chocolate chips until evenly dispersed.
Using a small 1-tablespoon cookie scoop, form the cookie dough into small balls and place them on a baking sheet lined with parchment or wax paper. Place the tray in the fridge to chill.
Melt the chocolate: place the chocolate in a microwave-safe mixing bowl and microwave in 30-second intervals, stirring each time, until the chocolate is melted and smooth. (Alternatively, use a double boiler to melt the chocolate.)
Working one at a time, dip the cookie dough balls into the melted chocolate, let the excess chocolate drip off back into the bowl, and place them on a tray lined with parchment or wax paper. Working quickly, stick 2 pretzel pieces in the top of the chocolate ball (immediately after dipping it in chocolate, while it’s still wet). Then allow them to sit to let the chocolate harden.
Use a small amount of melted chocolate to stick 2 candy eyes and a red candy nose on each pretzel candy. Place the tray of candies in the refrigerator to let set completely before serving. Serve slightly chilled or at room temperature.
