Vegan Sausage Stuffing Recipe

Ingredients
7-8 cups french bread, cut into cubes
1 Tbsp butter or olive oil
1 cup onions, diced
1 cup celery, diced
4 vegan sausage links, crumbled
2 cloves garlic, minced
1 Tbsp fresh rosemary, minced or ¼ tsp dried rosemary
¼ tsp salt, plus more to taste
¼ tsp black pepper
2 Tbsp maple syrup
2 - 2 ½ cups vegetable broth
For garnish: fresh rosemary
Instructions
Preheat the oven to 350. Spread the cubed French bread onto a baking sheet. Toast in the oven for 12-15 minutes until crisp and golden (similar to croutons). Remove from the oven and set aside.
Heat a skillet over medium heat. Melt the butter then saute the onions and celery for 1 minute.
Add in the crumbled vegan sausage and stir for an additional 4 minutes or cook according to the package instructions.
Add the garlic and rosemary and stir for another 1 minute then turn off the heat.
To a large bowl, add the toasted bread, sausage, and onion mixture and season with salt and black pepper. Stir to mix well.
Pour in the maple syrup and 2 cups of vegetable broth then stir to combine. The bread (stuffing) mixture should be moist but not soggy. Add the additional ½ cup of broth if necessary.
Transfer the stuffing mixture to a greased baking dish. Baked uncovered in the oven for 35 minutes until the top is golden brown. Remove the stuffing from the oven and allow it to cool before serving.
